Corfu the island of pancakes (2021)

Corfu is one of the northernmost and most densely populated islands of the Mediterranean. In the historic center of the city the signs of difficult times are engraved in various corners. But what was one of the most important components that we find here that is responsible for shaping traditions and especially the survival not only of Corfu but of entire peoples throughout history? Pancake is a round dish made with a kind of porridge made mainly of flour and water and archeological evidence shows that it is probably the oldest and most widespread food with its shape and structure varying from place to place.
